Classic risotto recipes

Nowadays, we can find different risotto recipes, which is undoubtedly one of the most famous dishes in Italian gastronomy, along with pizza and pasta. There are a thousand ways to prepare it and we can include dozens of different ingredients that will give it a special flavour. But among all the risotto recipes available, today we have chosen the most classic one, risotto parmesan.

Ingredients for classic risotto recipes

– 300 grams of rice
– 250 grams of Parmesan cheese
– 100 grams of butter
– One medium onion
– One litre of chicken or vegetable broth
– 100 ml white wine
– Ground black pepper
– Nutmeg
– Salt
– Virgin olive oil

Once we have all the ingredients ready, the first thing we have to do is peel the garlic and cut it into thin slices, which we will also do with the onion. Then put both ingredients in a frying pan and fry them with a little olive oil over a medium heat.

When both ingredients are golden brown, add a little white wine and salt and mix well over a medium-high heat until the alcohol evaporates. Return to medium heat and add the rice, which is the star ingredient in classic risotto recipes. Let it fry for a couple of minutes and then add two ladles of previously heated stock. Stir a little and leave on a medium-low heat so that the rice consumes the stock.

Once it has evaporated, add a little more stock and repeat the process until all the stock has been used up. Once the rice is creamy and tender, remove the pan from the heat and season to taste with salt and pepper. Then add the butter and mix well, followed by the Parmesan cheese for an even creamier texture.
