Mushrooms for our summer salads

A good Mediterranean diet should contain a wide variety of foods in order to be healthy and balanced, and above all very tasty. And among these foods are mushrooms, which although it is true that they are more common in autumn, in summer we can enjoy some of them, such as mushrooms, as well as others that we keep in our freezer.

Therefore, in these hot summer weeks, there is nothing better than a chicken and mushroom salad such as mushrooms to nourish and refresh us. To make this delicious salad we will need:

Ingredients for the chicken and mushroom salad

  • 1 lemon
  • 150 grams of mushrooms, in this case we will use mushrooms.
  • the same quantity of chicken breast to be cut into strips
  • 2 tomatoes
  • olive oil
  • 2 tablespoons of chopped chives
  • 2 more chopped parsley
  • salt, white pepper
  • a small teaspoon of fennel seeds.

To begin to prepare our rich and delicious chicken salad with mushrooms, among other ingredients, we must chop the mushrooms, in this case, we must slice the mushrooms and once they are sliced we must pour a little lemon over them. We also cut and slice the chicken into strips and sprinkle with lemon juice. Both the mushrooms and the chicken are lightly grilled.

In a bowl, mix a little oil and vinegar with the salt, white pepper, parsley and chives. Mix everything well and once mixed, pour it over the chicken and mushrooms that have been previously grilled. Mix well the sauce with the chicken strips and mushrooms to enjoy our tasty and healthy salad in these hot summer days.
