Bold (Tricholoma terreum)
Negrilla, with a greyish cap, does not have a strong fragrance, but its mild sylvan perfume is splendid when prepared in an omelette and complements more robust ingredients admirably.
It is a 100% usable mushroom and gives a beautiful appearance to dishes.
The negrilla can be preserved in many ways. The most common are vinaigrette and brine.
