Description
Our Trumpet of Death (Craterellus cornucopioides) is processed in a traditional way and does not contain any preservatives or colouring agents.
This funereal-looking mushroom is a cerrar relative of chanterelles and, like them, an excellent edible when fresh or dried. It is a dark, almost black fungus. This mushroom is not attractive, but has a very good taste. It is difficult to find due to its small size and dark colour, easily mistaken for leaf litter on the forest floor.
Its aroma has personality, with a strong background of wild material, but with an initial entrance or light sweet and at the same time spicy perfume. The flesh, dry and thin, is tough and elastic.
The fruiting body is funnel-shaped and its colour is blackish when wet, lighter, almost grey when dry.
It grows in the wet areas of coniferous forests in mid-winter and early spring.
Some recipes: Truffled rice with prawns and trumpet of death, monkfish with trumpet of death, stuffed squid with trumpet of death, duck breast with grape sauce and trumpet of death.
