SUMMER TRUFFLE
The summer truffle (Tuber aestivum) is less known than the black truffle (Tuber melanosporum) and is harvested during the summer, between May and September.
It grows in a similar habitat to the black truffle, i.e. next to the roots of Mediterranean forests, but does not require specific conditions like the black truffle in terms of soil composition and humidity, hence its delicate flavour and aroma. This also facilitates its cultivation and makes it more affordable compared to the black truffle.
Dark on the outside and with more pronounced pyramidal shapes and inside, it is light brown with white stripes when ripe.
The delicate aroma of the summer truffle is an advantage when it comes to adding just a hint of truffle to recipes, which is why it is highly appreciated for its many gastronomic possibilities.
